Continuing our theme of French Classics reinvented, we invite you to try our Boeuf Bourguignon Feast!. Like Cassoulet, Boeuf Bourguignon is a French peasant dish that has been refined into haute cuisine. The first "modern" recipe was by Escoffier in 1903. Julia Child gushed that Boeuf Bourginon was "One of the most delicious beef dishes concocted by man!" We tried many variations and cuts of meat to bring you this refined dish, along with some delicious accompaniments. Enjoy!

Pâté de Foie de Canard Parfumé au Cognac
Small Plate
House made Liberty Farm duck liver pate flavored with cognac and spices, served with cornichon and crackers.
Bisque de Moules Aromatisée au Safran et à L'estragon
Small Plate
Mussel bisque flavored with saffron, perfumed with tarragon.
Salade Verte aux Tomates Conservées et aux Noix de Pin en Vinaigrette
A fresh green salad of arugula with preserved farmer’s market tomatoes and pine nuts in a light citrus dressing. (may be substituted based on what's good at the farmer's market)
Boeuf Bourguignon Avec Purée de Chou-fleur et Pomme de Terre
The main attraction: An unctuous beef casserole slowly braised in a red wine, mushroom, and pearl onion sauce. Served with a potato and cauliflower puree.
Pot au Créme au Chocolat avec Gingembre
Ghirardelli chocolate cream with stem ginger. Served with orange ginger shortbreads.
Wine Choices
We've carefully chosen special wines to complement our meal. (available for purchase) White: Chateau Petit Roubié 2016. Picpoul de Pinet, an unusual grape from Languedoc. Grown organically. This grape is described as "achingly cool" amongst NY sommeliers. "Aromas of flowers with the scent of white peach. Nicely balanced". A nice counterpoint to rich French stews. Red: Châteaux Malescasse, 2008, Haut Medoc. Has the smooth round tannins of an aged Bordeaux. "Rich aromas of mocha, cocoa beans and truffles followed by ripe red and black berries."
