A modern take on every Filipino Dad’s breakfast specialty, the leftover corned beef omelette!! 6-day brined corned beef stir-fried with Filipino mirepoix (garlic-onion-tomato) then baked into a fluffy frittata. Served with tomato “Jufran” jam and topped with crispy garlic rice noodles.
