I like mixing foods from all over the African Diaspora. Food from all over the world to make a wonderful fusion of flavors. This menu will have Southern and Creole food with Carribean and African spices.

Reaching back to my Creole roots for this lovely small plate. A shrimp in a zesty sauce multi colored peppers poured over a silver dollar sized hoe cake (skillet cooked cornbread).
Caribbean Inspired Fried Chicken
Entree
This is a fusion of two of my favorite cuisines. I use Caribbean seasoning and Southern frying to give depth and nuance to a comfort food favorite. Fried Chicken. I will be serving the Fried Chicken with Garlic Mash potatoes and a mushroom gravy. My sauces and dishes combine African Seasoning with American Soul Food. African Foods with French and New American Techniques to bring a fusion of flavors that will be comforting and new all at the same time.
