Hoda grew up here in the Bay Area; Amanda was born and raised in Hawaii. We both share Egyptian roots and a passion for recreating the Egyptian comfort foods we grew up with. Koshary (pronounced ko-shah-ree), is a hearty, rustic bowl of grains topped off with lentils, chickpeas, crispy onions, and a cumin spiced tomato sauce. Koshary is quintessential Egyptian street food and always at the heart of our menus. In Egypt, koshary is sold from carts by street vendors, in restaurants, and made at home — all with regional variations and each considered a different culinary experience. As we say in Arabic at the start of every meal, bil hana wa ash-shifa: with joy and good health!
