KOSHARY: Egyptian Street Food is inspired by our Egyptian roots and the comfort food we grew up with. Koshary (pronounced "ko-shah-ree"), is a hearty, rustic bowl of grains topped off with lentils, chickpeas, crispy onions, and a cumin spiced tomato sauce. Koshary is sold from carts by street vendors, in restaurants, and made at home — all with regional variations and each considered a different culinary experience. As we say in Arabic at the start of every meal, bil hana wa ash-shifa: with joy and good health!

Classic Cairo Koshary

A hearty bowl of Egyptian rice, ditalini, lentils, chickpeas and a cumin spiced tomato sauce, topped off with crispy onions and our two signature side sauces: "dakka" (a tangy, garlic vinaigrette) and "shatta" (a spicy, red chilli). Originally from Cairo but enjoyed all over Egypt, this bowl is as authentic as koshary gets. (Vegetarian)
"Freaky Freekeh" Koshary
Entree
Koshary made with freekeh (pronounced "freek-AH"). Freekeh is an ancient supergrain and gives this bowl lots of texture and fiber to keep you fuller longer. Freekeh is layered under cauliflower rice, arugula, lentils, chickpeas, a cumin-spiced tomato sauce, and topped off with crispy onions. This variation offers a lighter twist on our Classic Cairo Koshary. (Vegetarian)
Lamb Kofta Meatballs

Pomegranate Glazed Freekeh "Meatballs"

Baladi Salad

This simple salad is a staple at every Egyptian meal and has as many authentic variations as koshary. Our favorite version is one with organic seedless cucumbers, juicy tomatoes, and green onions, lightly dressed with lemon juice, parsley, and fresh mint.
Rose Water Rice Pudding

In Egypt, rice pudding is the classic companion to koshary - so much so, that many koshary carts and restaurants offer only koshary and rice pudding on their menus. Made with rice flour, our rice pudding is smooth with hints of rose water, and topped off with pistachios.
Hibiscus Spritzer

This fizzy refresher features a staple of classic Egyptian street fare: hibiscus iced tea. Our iced tea is made from slowly brewing whole roselle flowers imported from Aswan (Upper Egypt) before adding seltzer water and a twist of fresh lime juice. Lightly sweetened, this drink is packed with all the pure antioxidants and nutrients of the hibiscus flowers. (Non-Alcoholic)
Tamarind Sour

This sour chilled drink is a classic companion to koshary on street vendors' carts. Tamarind fruit pulp is lightly sweetened with organic palm sugar, and fresh ginger adds a subtle kick. A rich source of vitamins, minerals, and dietary fiber, tamarind is a powerful antioxidant and anti-inflammatory agent. (Non-Alcoholic)
