Andrew Ullom is the former executive pastry chef of Ashley Christensen Restaurant Group in Raleigh, NC. Union Special Bread, Ullom's new bakery, is set to open Summer 2019. Using roller-milled and stone-ground flours produced solely in North Carolina - alongside corn and other grains grown in the South - Union Special Bread will focus on hand made bread leavened with natural cultures alongside a line of croissants and other pastries using fresh and local ingredients.
