Solterito Salad
Appetizer
Solterito is an appetizer that is always served cold. This colorful salad is so versatile that you can give or take any ingredient of your liking to the preparation. Rocoto is the most typical chili pepper of this part of the country. It has the appearance of a sweet and innocent red bell pepper, but beware! It can be difficult to take its dangerous heat. Fresh cheese, beans, and olives usually complete this salad.
Ocopa
Small Plate
Ocopa is a delicious recipe that derives from Arequipa, a Southern-Peruvian mountain city. This dish is most commonly served as an appetizer or a side dish. Depending on the dish that is served with depicts whether this Peruvian treat is going to be served hot or cold. Its main ingredients are huacatay (black mint), aji mirasol (hot peppers), and peanuts.
Locro
Entree
Its original name was Rocro, in Quechua, and then it transmuted to locro. The basic version is a pumpkin stew with potatoes and chili peppers, and this is a wonderful vegetarian meal, but you could choose to add different ingredients like shrimps, beef, dried meat, lamb, hen, and seaweeds. It is the perfect marriage between native ingredients, like pumpkin, potatoes and chili peppers, with other flavours that came to our country via the Spanish conquistadors, like onion, milk and cheese.

During the Age of Exploration, the original recipe of the Arroz con Leche was brought to South America, where it gave way to many local variations. Spanish rice pudding recipes typically include cinnamon, raisins and vanilla as flavor enhancers. South American versions of the arroz con leche may include other ingredients, such as nutmeg, chocolate, or even chili powder.
