Baby Bok Choy Cups

Stella Star Ingredient: Bok Choy


  • For the filling:
  • 8 baby bok choy, divided
  • 1/2 pound ground chicken
  • 2 scallions, sliced into 1/2-inch rounds (whites and greens)
  • 1/2 red bell pepper, finely chopped (about 1/2 cup)
  • 1/4 cup water chestnuts, chopped
  • 1/4 cup bean sprouts, roughly chopped
  • 1/4 cup shredded carrots
  • 1 teaspoon fresh ginger, grated
  • Vegetable oil for cooking
  • Black sesame seeds, for garnish
  • Cilantro, for garnish
  • For the sauce:
  • 1/4 cup soy
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 teaspoon granulated sugar
  • 1 clove garlic, minced
  • 1/2 teaspoon chili flakes
  • Peanut sauce:
  • 1/4 cup peanut butter
  • 1/4 cup soy sauce
  • 1/2 lime, juiced
  • 1 teaspoon granulated sugar
  • 1 teaspoon ginger, grated


  1. Make the sauce:
  2. In a small bowl, combine all of the sauce ingredients and mix together until well combined. Set aside.
  3. Prepare the bok choy:
  4. Cut the leafy green tops off and set aside. Using a paring knife, remove the core of the bok choy. Use a spoon to scoop and hollow out as much of the center as you can. Finely chop up the green tops of the bok choy (you will need about 1/2 cup). Discard the rest.
  5. Make the filling:
  6. In a large skillet over medium-high heat, add the oil. Next, add ground chicken and brown for 3 to 5 minutes, breaking up the chicken with the back of a spoon. Add the bok choy tops, followed by the rest of the filling ingredients and cook for another 3 to 5 minutes. Add the sauce and cook until thickened. Set mixture aside to cool slightly.
  7. Fill and steam the cups:
  8. Fill a large pot with a few inches of water and place steamer inside (make sure water is below the steamer). Cover with a lid and bring water to boil. Fill each bok choy cup with about a half cup of filling. Transfer to steamer and cover with lid. Steam for 10 to 15 minutes, depending on size of bok choy.
  9. Peanut sauce:
  10. In a small bowl, combine all peanut sauce ingredients and whisk until well combined. If too thick, add water to thin out.
  11. Serve bok choy cups with peanut sauce, and enjoy!
