Mediterranean Veggie Sliders

Stella Star Ingredient: Dill

Ingredients

  • 1 cup cooked chickpeas
  • 1 cup red quinoa, cooked
  • 1/4 cup red onions, diced
  • 1/2 cup parsley, chopped
  • 2 teaspoons garlic, minced
  • 2 teaspoons smoked paprika
  • 1 large egg
  • 1 tablespoon lemon juice
  • 2 tablespoons Kalamata olives, pitted
  • 3 tablespoons all purpose flour
  • Salt and pepper
  • For the yogurt sauce:
  • 1 cup nonfat Greek plain yogurt
  • 2 teaspoons olive oil
  • 1 tablespoon chopped dill* Stella Star Ingredient
  • 2 teaspoons lemon juice
  • Salt and pepper, to taste
  • To assemble:
  • Slider buns, toasted
  • Thinly sliced Persian cucumber
  • 4 thin slices red onion
  • Green leaf lettuce

Steps

  1. In a food processor, combine chickpeas, quinoa, red onion, parsley, garlic, smoked paprika lemon juice, Kalamata olives, flour and salt and pepper. Divide the mixture into 8 patties. Firmly press together.
  2. Pan fry the patties over medium-high heat until both sides are browned and crispy, about 3 minutes per side.
  3. In a small mixing bowl, combine yogurt, olive oil, dill, lemon juice and salt and pepper.
  4. Assemble the sliders. Top the bottom bun with burger, yogurt sauce, cucumbers, lettuce, red onion slices, followed by the top bun.
