Mediterranean Veggie Sliders

Ingredients

  • 1 cup cooked chickpeas
  • 1 cup red quinoa, cooked
  • 1/4 cup red onions, diced
  • 1/2 cup parsley, chopped
  • 2 teaspoons garlic, minced
  • 2 teaspoons smoked paprika
  • 1 large egg
  • 1 tablespoon lemon juice
  • 2 tablespoons Kalamata olives, pitted
  • 3 tablespoons all purpose flour
  • Salt and pepper
  • For the yogurt sauce:
  • 1 cup nonfat Greek plain yogurt
  • 2 teaspoons olive oil
  • 1 tablespoon chopped dill* Stella Star Ingredient
  • 2 teaspoons lemon juice
  • Salt and pepper, to taste
  • To assemble:
  • Slider buns, toasted
  • Thinly sliced Persian cucumber
  • 4 thin slices red onion
  • Green leaf lettuce

Steps

  • In a food processor, combine chickpeas, quinoa, red onion, parsley, garlic, smoked paprika lemon juice, Kalamata olives, flour and salt and pepper. Divide the mixture into 8 patties. Firmly press together.
  • Pan fry the patties over medium-high heat until both sides are browned and crispy, about 3 minutes per side.
  • In a small mixing bowl, combine yogurt, olive oil, dill, lemon juice and salt and pepper.
  • Assemble the sliders. Top the bottom bun with burger, yogurt sauce, cucumbers, lettuce, red onion slices, followed by the top bun.
