Quick Chicken Sliders

Stella Star Ingredient: Quick Pickled Slaw


  • Chicken:
  • 1/2 of a leftover rotisserie chicken, pulled
  • Bottled BBQ sauce, to taste
  • Hawaiian Rolls
  • Quick Pickled Slaw:
  • 2 cups thinly sliced green cabbage
  • 1 cup thinly sliced red cabbage
  • 1 shallot, thinly sliced
  • 1/2 cup apple cider vinegar
  • ½ cup water
  • 1 tablespoon sugar
  • 2 teaspoons mustard seeds
  • 2 teaspoons kosher salt


  1. Pull apart chicken into a bowl and mix with BBQ sauce. Set aside.
  2. Combine all ingredients for coleslaw in a large bowl and let sit for up to 30 minutes to allow flavors to combine.
  3. Serve chicken on a King's Hawaiian roll and top with slaw.
  4. Quick Pickled Slaw:
  5. Toss the cabbage and shallot together in a large heatproof bowl. Add the vinegar, water, sugar, mustard seeds and salt together in a medium saucepan and bring to a boil while stirring. Stir until sugar and salt dissolves, turn off the heat, and pour over the cabbage mixture. Toss the cabbage and the vinegar. Place in the refrigerator uncovered for 10 minutes to cool. Drain. Use to top sliders.
