Learn to make Pizza al Taglio, the Roman style pan pizza. We’ll go over: hand mixing a high-hydration dough, bulk fermentation, proper pre and final shaping, as well as all the different topping possibilities--and how and when they should be added during the bake. We’ll start with a Pizza Rossa base. Pizza Rossa is an OG pizza consisting of a good tomato sauce, olive oil, salt, and oregano. It’s delicious and versatile, so you can choose your own adventure when it comes to the toppings! I'll be making my favorite potato pizza with smoked mozzarella, bacon, and onions.
