Kalman is the executive chef and partner of Union Pasadena and Knead & Co Pasta Bar. He was nominated for a James Beard "Rising Star Chef" award and has received high praise from food critic Jonathan Gold. For this event, he'll be sharing his northern Italian cuisine characterized by a philosophy of nose-to-tail cooking, market-driven ingredients, and a simple approach.
