Bryan Russo is chef de cuisine at one of the most inventive restaurants in St. Louis – but his first industry job was at Taco Bell. He initially intended to study music, but after a taste of the food world, he decided to go to culinary school instead. He eventually worked at the acclaimed Harvest with Brad Bardon, who kept in touch after the restaurant closed. After a stint at Dressel's, Bardon brought Russo on for pre-opening pop ups at Mike Randolph's Público and eventually hired him full time. Russo took a break from wood-fired cooking to talk about his Sicilian grandparents, passion and mise en place.
