Anything Goes Gumbo
Everyone knows the key to a good gumbo is the roux, it's the foundation and what essentially makes it the real thing, without this is it would basically be a stew. Living in the mountains of Colorado, there isn't always access to high quality, fresh seafood and so cooking this means improvising. Hang with me while I show you how to make the perfect roux and then build all the essential flavors for your ideal gumbo up from there based on what you have access to, and what you have in your kitchen!
