Around The World in 80 Pies: Sweden's Västerbotten Pie
Join us for the latest installation of Around The World in 80 Pies celebrating Sweden's Västerbotten Pie. We will be joined by Patrice Johnson, culinary instructor and self-proclaimed Nordic food nerd from the American Swedish Institute who will give us a slice of Swedish culinary history followed by a cooking demonstration. Follow along with me and Patrice as we make Västerbotten Pie together while learning more about the world around us through the lens of pie!
Swedish Cheese Tart (Västerbottensostpaj)
Recipe adapted from Trina Hahnemann’s “Scandinavian Cookbook" Ingredients; 1 puff pastry, thawed 4 eggs 5 ounces milk 12 ounces cheddar or gruyere cheese, grated ½ teaspoon salt Pepper to taste Butter for greasing Directions: Preheat oven to 350-degrees. Butter 8 to 9 inch pie plate. Roll out pastry on floured work surface until thin and use it to line the pie plate. In large mixing bowl beat together the eggs and milk. Stir in grated cheese, salt, and lots of pepper. Pour into tart shell. Bake 45 minutes. Garnish with fresh dill or chives if desired.
