We will be celebrating Chilean Independence Day with our first appearance to Feastly. Lil'18th has become a tradition in Chile, always occurring the weekend after Independence Day. Its an opportunity for those who can't attend the official celebrations or simply wish to prolong the festivities. Our food concept is Chilean Favorites served family style passed and shared for all to enjoy!

Empanadas Cameron Queso/ Fried Cheese and Shrimp Empanadas with Salsa Verde

Fried Bay Shrimp and Cheese Empanadas served with a green salsa made with cilantro, parsley, oregano, chiles, lemon and vinegar.
Pan Amasado/Country Bread
Small Plate
Pan Amasado literally means kneaded bread a rustic bread quite often seen on tables throughout the countryside of Chile.
Arrollado de Huaso/ County Style Pork Roll
Entree
Strips of pork marinated in traditional chilean spices (merken*, cumin, garlic and corriander) then wrapped in porkskin slow cooked to perfection.
*merken is a Chilean condiment made of a Chilean hot pepper called Cacho de Cabra dried and smoked then ground to powder mixed with cumin and corriander seeds.
Papas Cocidos con Salsa Chilota y Romero/ Chilean Boiled Potatoes with Chilota and Rosemary Aioli

Boiled Potatoes with a Rosemary and *Chilota Seed Aioli.
*Chilota seeds are a new culinary ingredient making their first appearance on the Chilean food scene only about 10 years ago. The seeds come from the Canelo tree which is considered a sacred tree to the indigenous Mapuche tribe of Chile.

Lucuma is a fruit found in the Andean Valleys. It is used as a natural sweetener and has many nutricional benefits. Its flavor is reminiscent of maple.
