Jalapeño Popper Mac and Cheese
mise en place: 2 - 3 ea jalapeños ½ ea yellow onion 2 ea garlic cloves 1 Tbs + 7 Tbs unsalted butter 1 Tbs kosher salt 1 tsp paprika ⅛ tsp ground white pepper 4 c whole milk ½ c flour 1 lb pasta, shape of your choice 6 oz cream cheese 1 lb/16 oz/4 c extra sharp cheddar ½ c breadcrumbs (panko or plain)
