Caribbean food is that bright & spicy smack of flavor on every level food that, personally, I crave. Turns out, I'm not the only one! Caribbean flavors are bold and surprising; nuanced & layered and totally crave worthy and that's why Caribbean dishes are among my favorite to prepare- with my own twist, of course. Ethnically, my family is super diverse; my father's side of the family hails from the Dominican Republic so I've always taken an interest in the island styles and traditions of food.
Jerk Chicken Thighs
Organic, free-range chicken thighs from Berkeley Bowl; marinated for 2 - 3 days in my secret wet Jerk marinade. The marinade includes traditional flavors found in Jamaican jerk: scallion, allspice, soy, cilantro and also includes some surprises like fresh ginger and pineapple juice. The marinade is then cooked off and reduced to be served alongside the chicken for a depth of flavor that simple cannot be described, it must be tasted!
Perfectly cooked, fluffy coconut rice provides a perfect compliment to the smoky, spicy and bright Jerk Chicken. Finished with unsweetened, toasted coconut flakes, this rice is so simple to make and yet so so delicious!
Cuban Style Black Beans
These black beans are slow-cooked for 3 or more hours; with layer after layer of flavor added hour by hour. Expect deep, unctuous flavors from warming spices and little sweet heat from bell (red + orange) and jalapeño peppers.
Rum Glazed Plaintains
The part we love about Caribbean and Soul Food cooking is the variety. There is something on the plate to appeal to every taste on the palate. This dinner is no exception! We take ripe, sweet and firm plantains (platanos maduros), fry them in coconut oil and deglaze with an aged, spiced rum.
Pickled Peach Salad
There's always gotta be something on the plate to cleanse and perk up the palate- it may as well be something delicious and original. Ripe peaches (or seasonal stone fruit) with thinly sliced red onions and bell peppers, tossed in a bit of organic cane sugar, vinegar and salt. Topped off with sprigs of bright cilantro & pink peppercorns. You'll be surprised by how much you'll love this dish!
Savory Yogurt Raita
Cool it all off with our delicious savory yogurt sauce (our version of raita). Made with Strauss' Organic Whole Milk Greek Yogurt, scallions, cilantro, black pepper, salt and olive oil.
