Roasted Rum Glazed Plaintains

The part we love about Caribbean and Soul Food cooking is the variety. There is something on the plate to appeal to every taste on the palate. This brunch is no exception!
We take ripe, sweet plantains (platanos maduros), roast them in coconut oil and deglaze with an aged, spiced rum.
Coconut Rice

Perfectly cooked, fluffy coconut rice provides a perfect compliment to the smoky and slightly spicy Cuban Black Beans. Add an egg for extra richness and to make it a meal!
Finished with unsweetened, toasted coconut flakes, this rice is so simple to make and yet so so delicious!
Cuban Style Black Beans
Small Plate
These black beans are slow-cooked for 3 or more hours; with layer after layer of flavor added hour by hour. Expect deep, unctuous flavors from warming spices and little sweet heat from bell (red + orange) and jalapeño peppers.
