ChefsFeed Experiences cooking classes are a chance to virtually connect with chefs and bartenders, learn simple cooking tricks and tips, and most importantly, support the culinary community through this difficult time. 100% of ticket sales are for Covid-19 relief, to financially support the individual class instructor, their restaurant staff, or a charity of their choice. --- This week's class, Chef Behzad is going to demonstrate how to make the perfect long grain basmati rice, while pulling of one of the most important table pieces in Persian food - "tahdig." Tahdig is the infamous "bottom of the rice pot" which slowly crisps up and turns golden brown through the cooking process. This weeks variation is a jeweled rice of rose scented saffron basmati with barberries, Persian Pistachios, toasted almonds, candied orange zest and more! Beverage director Sarah Boisjoli is going to talk about all things sherry and pair something beautiful to tie the whole thing together. Proceeds from this week's class will be going to Tanabel, a refugee powered organization working currently to provide food and aid to refugee families in need!
"Tahdig" is the Persian reference to the bottom of the rice pot that gets golden and crispy through the course of slow cooking and steaming rice. Iranians make various different kinds of tahdig that range from fondant potatoes, bread and even flat deboned fish. This variation called "Sheerin Polo" or sweet rice will feature Persian Pistachios, barberries, candied orange zest, toasted almonds and more!
