This week's class features techniques for making the most out of your grill this summer, and exploring objectively the Middle East's favourite style of dish - kebob! In this class we will explore three variation and talk meat quality, preparations and carefully grilling in order to make the best kabobs possible! Proceeds from this week's class will be going to the Edible Schoolyard project, working to bring together our students and farmers and build a stronger future around education, sustainability and food!
Saffron Marinated Chicken Thighs
Tender pieces of chicken thigh are marinated in an intoxicating collection of yogurt, saffron, and onion, before being grilled over hot coals and dressed with fresh lime juice and sumac!
Rich marbled pieces of sirloin are tenderized through an old Persian technique before being brushed with saffron-yogurt and grilled over hot coals to create a smokey and crispy crust.
A mix of ground beef and lamb are seasoned with saffron and onion before being carefully formed on skewers and grilled over coals to a beautiful caramelized perfection. The spread will be severed with fresh herbs, grilled onions and tomatoes, rich labneh and fresh bread!
