Just the mere thought of any of Jamaica’s top 10 favourite dishes is enough to make one begin to salivate immediately. That is because the cuisine of our island just has that effect on anyone who samples our multifarious food delights. But more importantly, our interesting mix of peoples from many cultural backgrounds, has had an integral part to play in what we eat and how we prepare these dishes.
I'm Chef Christopher and my mother Chef Sharon taught me how to cook at age 10 and her grandmother taught her age 10. I have been trained in the heritage art of preparing and cooking Traditional Caribbean Dishes.
Just ponder for a moment, the effect on cuisine left by our ancestors or colonisers from Africa, Spain, France, England and Germany. Today, blending the tastes of these countries with Jamaican dishes is elegantly termed “fusion”, but it has evolved from centuries ago

The Sunday Macaroni and Cheese Pie

In Jamaica we call it a Macaroni Pie but in America it is called Baked Macaroni & Cheese.
The Beauty of this dish is that Macaroni Pies are never exactly the same. The twice cooked macaroni is drenched in egg & cheese and baked to a golden brown crisp.
