Truth be told, when we hear the word Afghanistan, our thoughts usually go towards war and violence. Chef Naina Bhedwar is here to help us shift gears and attempt to change that through opening our palates to new flavors and our hearts (and wallets, please!) to help support the people there who are suffering. Among many other alluring offerings, Afghanistan has beautiful food. A perfect bridge between India and the Middle East, Afghan cuisine is often simple but bursting with flavor. Approachable recipes that don't intimidate, this is a cuisine that needs to make more of a mark on the Western palate. Let's start here with Lawang-e-murgh, a subtle and utterly delicious creamy chicken stew that is still light on the stomach and the palate.
