Valentine's is the most lovely time of the year isn't it? Well, unless you're an independent, single, loving it and don't need nobody to make yourself happy! Come join me and the rest of our fellow single friends in an "Anti-Valentine's Day" dinner mixer. We will showcase everything you love and hate about this Hallmark Holiday in a 9-course dinner alongside a cocktail menu pairing by yours truly.

We special order our bread from aspiring bakers from people's homes. This bread is made from Britney Brillantes of Sacramento. She will be making a focaccia bread that we will be sharing for the meal.

We like making fun potatoes so we put lots of love and different techniques that will provide contrasting textures and balance. This isn't your grandma's Thanksgiving mashed potatoes!

Beets were one of the staples in the first fine dining restaurant I worked at. I love how simple and technical cooking beets are and how delicate the taste is when you cook them perfectly. We serve our beets with a citrus vinaigrette, Sausalito watercress, goat's cheese, and smoked almonds.

This is one of the first recipes I made at my first Valentine's Day dinner. I apply my experience with each added restaurant to continue improving this dish. We braise octopus and compress it in it's own jus. We slice it extremely thin and top it off with an thai larb style arugula salad.

One of my favorite cuisines is barbecue, and I love taking classic barbecue techniques and apply it to new, fun cuts of meat. We render a leg of lamb over a smoky wood fire for hours, we slice it and serve it with a bright, lemony, and herbaceous sauce.

One of the events at this dinner will be a speed dating round. And each participant will share a plate of house made pasta and bolognese sauce. My Italian cooking background runs deep and this will be a great dish to share your first date with each other. *All people not participating in the speed dating will also have some pasta lol*

I always spoiled myself on Valentine's Day with the fish entree. We cure salmon and slowly baste it in brown butter and meyer lemon. We garnish it with fresh dill and fine herbs for a beautifully aromatic finish.

My family didn't eat a lot of dessert but we ate a lot of fruit after dinner. My dad is a fiend for sweet fruit and will drive to the furthest asian grocery store in order to get the best available. We find fruits at the farmer's market at it's peak and use a simple preparation in order to maintain it's integrity while highlighting its beautiful flavors. Served with bread and house ricotta.

Nothing is sexier than chocolate and ruby red berries so we are making a delectable chocolate-raspberry gelato to round out this intense meal.
