If you ever come to a ceremonial event in Indonesia, you may have seen this cone-shaped rice with side dishes and garnishes styled around it. This mountain-like rice is called Tumpeng. This is only served for formal events such as birthdays, anniversaries, and thanksgiving events, especially in Java and Bali. Being passed down from the ancestors, every single part of Tumpeng also has its own meanings. The mountain-like shape symbolizes the direction of the Gods and acts as the center of gratitude. As my last 2016 dinner, it's only fitting to say goodbye to this year with a celebration meal. Traditionally, Tumpeng consists of beef, chicken, vegetables, and seafood. But for tonight, I will focus on sustainable seafood. Serving: Family Style. Each table will have a few big Tumpeng and side dishes to share.

Nasi Kuning (Yellow Rice)
A combination of Jasmine and sticky rice cooked in turmeric juice, coconut milk, seafood broth, local assorted seaweed and mushrooms. To enhance the flavor, I added bits of house-smoked black cod and fried anchovies in the rice.
Crab deviled eggs

Crab meat + egg yolk + Indonesian salsa verde (green sambal) deviled eggs.
Grilled Seafood

Grilled mussels, clams, and octopus. Served with sweet soy sauce and chopped Thai chilis.
Bay shrimp and potatoes sambal

Stir-fry bay shrimp and potatoes in spicy chili sauce.
Urap Salad
Vegetables mixed with seasoned and spiced grated coconut for dressing.
Ginger steamed Crab
Dungeness crab steamed with ginger & garlic. The photo above is king crab legs, but rejoice, it's currently Dungeness crab season!
Fish Curry
Yellow curry from scratch. Fresh black cod.
Young Coconut Ice Cream
House-made young coconut ice cream served with diced mangoes.
