I love vegetables and I love comforting food. But the words "comfort food" usually bring to mind mac'n'cheese, fried chicken, and pizza - which in their own right can be great, but I cook my own version of comfort food, a version that also benefits your well being. I highlight the vegetables that are in season, bring in my favorite spices, make sure the flavors all work well together and of course I make sure that the food elicits a level of comfort and warmth.

Simple herbs - mint, dill, and parsley, tossed with olive oil, lemon juice, and kosher salt.

A carrot turmeric puree is the creamy element to a vegan risotto made with farro in place of rice. Topped with blistered shishitos, sun golds, and gomasio.
Coconut Fig Leaf Ice Cream
Dessert
Fig leaves picked from my neighborhood are charred to release their aromas and then steeped in coconut milk with vanilla and a hint of rosewater to create a subtle and sweet vegan ice cream.
