Each dish is 100% Italian-approved, honoring seasonal ingredients and traditional techniques. Your spot includes a 5-course feast, ingredients/recipes and hands-on cooking. Fresh Focaccia with Cherry Tomatoes

Slow-rise focaccia -- crowned in cherry tomatoes, garden herbs and imported extra virgin olive oil. You'll learn to mix, knead and shape this bready bounty with the chef's expert tips.
Polpette di Zucchine - Zucchini Croquettes
Small Plate
Crispy "polpette" (croquettes) made with shredded zucchine, milky ricotta, aged pecorino cheese and garden mint. Fried until addictively golden-brown.
Handmade Orecchiette Pasta
Entree
Hand-shaped "little ear" (orecchiette) pasta. Your Italy-trained chefs will teach you how to make this traditional pasta from scratch -- including how to prep the dough and shape the individual orecchiette. Your pasta is topped in caramelized eggplant, ricotta salata cheese, and a roasted tomato sugo.
Handmade Cavatelli Pasta

Hand-formed "cavatelli" pasta -- a traditional dish in Puglia's kitchens and trattorias. You'll learn how to knead, shape and cut this classic Pugliese pasta under the guidance of your chefs. Pasta is crowned in a rich pesto of oven-roasted broccoli, toasted hazelnuts, grated parmigiano and lemon zest.
Spiked Ricotta Gelato
Dessert
Light, creamy and a wee bit boozy -- your dessert is a house-churned "ricotta" gelato spiked with imported Italian liquor. This decadent "dolce" will be served with salted caramel balsamic brittle.
