Emperors in the past used to call on cooks from many regions to come serve small bites of their local dishes so that the emperor could experience many regional tastes and flavors in one meal. We call this supper Plato Emperador to share with you a combination of some of our favorite flavors and styles of various regions in Mexico.

Raw Salsa Verde is made with tomatillos, cilantro, onion and chiles. Served with chips Salsa Molcajete is charred tomatoes, roasted chiles & garlic ground in a volcanic rock molcajete. Served with chips Guacamole- served on chicharron (fried pig skin) with grasshoppers (grasshoppers-chapulines are from Oaxaca)

Shrimp al Mezcal with Chipotle Aioili Shrimp with Hibiscus Relish/Shrimp Aguachile - A shrimp with hibiscus relish & vinaigrette, and a pickled shrimp served in a cucumber cup with fine herbs. Mini Sope w/ Cochinita Pibil & Morita Salad- Yucatan style dish- slow cooked pork with chiles, achiote, orange juice, w/ pickled onions, red cabbage salad & morita chile salsa. Sopa Verde with Corn & Squash-Green Soup made with coconut cream,charred poblano chiles, spinach, arugula, avocado, herbs, w/roasted corn and squash. Sopa Azteca- Vegetarian Tomato/Chile base Soup with fried tortilla strips, crema, radish, avocado. Ceviche on Cucumber Slice- White Fish Marinated in Lime with Olives, Cucumber, Chile, Cilantro, Herbs
