Chiles en Nogada is truly one of our favorite, tastiest dishes. Originating in Puebla, it is a Mexican dish of poblano chiles stuffed with picadillo (a mixture of ground meat, herbs, fruits and spices) topped with a goat cheese walnut sauce, called nogada, and pomegranate seeds.
The traditional season for making and eating this dish in Central Mexico is around when national independence festivities begin (mid September). The coloration of the dish—green chile, white sauce, red pomegranate are the main colors of the flag of Mexico.
