One of Yoko's favorite styles is a Tan Tan men, a Japanese take on Chinese Dan Dan noodles. Sadly, of the few we've tried here, none came close to what we were use to eating back in Tokyo. This is the Japanese version of the Szechuan classic, a semi-dry sesame & chili oil based dry noodle. Our version includes a splash of our 20hr Chicken Paitan bone broth. The flavors are more concentrated and there's a bit more balance and umami which makes it a bit more palatable then the original.
