In this meal, I stray away from my typical vegetable minded repertoire to include a few protein centered dishes. My philosophy of eating meat and fish in this context of shared eating is to try to create dishes which accent the richness and inherent flavor of that animal so that one doesn't feel they need to over indulge. Don't get me wrong, sometimes a burger or a steak is absolutely necessary. Other times, it is satisfying to eat slowly and deliberately- enjoying the company and the nuance.

Crudo Two Ways

I can't decide which plate I like better- so let's have both! Halibut Crudo- shaved fennel, watercress, pine nuts in lemon vinaigrette Mackeral Crudo- green papaya, puffed brown rice, cilantro-mint rice wine vinaigrette
Grilled Asparagus with Salsa Verde
Small Plate
Simple and satisfying- grilled asparagus is tossed in savory Salsa Verde and topped with almonds.
Pork Sugo Toasts
Small Plate
Pork Shoulder is cooked until fall apart tender in reduced tomato and wine with golden raisins. Placed on crisp toast and topped with pickled radishes and Pimenton.
Roasted Quail Over "Creamed" Kale, Spiced Mashed Chickpeas
Entree
Drawing from Sicilian flavors, Roasted quail rests in a nest of soft spiced chickpeas and savory smooth kale.
Rhubarb Tart
Dessert
Sweet and tangy rhubarb cooked into a jam then folded into a dense custard filling.
