About Baia Pasta: Baia Pasta (Oakland, CA) is a modern pasta with an old world soul. We craft artisanal dry pasta using the best Italian techniques and organic American flours. True to the Italian tradition: Baia Pasta is cold-kneaded, shaped through custom brass dies, and dried gently at low temperatures. As a result, our small batch pastas have a rough surface and a great al dente texture, with exceptional mouthfeel and unique flavor.

Orecchiette con le cime di rapa
Broccoli rabe, or rapini, is possibly the one stop ingredient for orecchiette in Puglia, Southern Italy. The taste is often described as nutty and bitter, pairing well with strong flavors such as garlic and anchovies. To make it vegetarian and please every palate I'll use 3 years old aka miso, garlic and red chili flakes, with a good dash of salty pecorino. This is a dish that will warm you up and surprise with its perfectly matching flavors.

I hope to find a "carosello" for this recipe, a cucumber/melon hybrid that is both sour and sweet. I'll see what California offers. The tartness of the bitter melon is balanced by potatoes, last of the season tomatoes (hopefully), black olives and a touch of red onions.
A glass of chardonnay
Waxy and structured, to stand up to the bold flavors of the pasta.
