Nusantara is a contemporary Indonesian term for the Indonesian archipelago. Taken from an oath by Gajah Mada in 1336, Nusantara means "outer islands". Based on the Majapahit concept of state includes; East Java, Madura, Bali, South Sumatra, Singapore, East Timor and Southern Thailand. The food that I will represent speaks of those countries and how much we influence each other.

Cucumber and Shallot Atjar
Small Plate
House pickled Cucumber, Shallot in Coriander, turmeric, rice Vinegar pickle brine. Tart and brightening.
Glass Noodles Lettuce Cups
Appetizer
Noodles made out of yam noodles, local squash, carrot, cilantro, scallions, mushroom pate in shallot and rice vinegar dressing. Refreshing and light.
Tamarind Soup and Shrimp
Small Plate
Savory and zesty Tamarind soup with corn, long green beans, squash and Shrimp.
Steamed Rice with Tomato and Chicken
Entree
Steamed jasmine rice with Chicken, Tomato and bell peppers.
Calamari and Clams Mie Goreng
Entree
Pan charred squid and scallions tossed in thin egg noodles. Served with seafood broth, charred calamari and steamed clams "Mie Tek Tek" style.
Banana Leaf steamed Cod
Entree
Local Cod slathered in ginger, galangal, lemongrass and Kaffir lime leaf paste. wrapped in banana leaves and steamed. Served with sweet "Bango" soy sauce.
Grilled Beef Satay in "Sate Padang" style
Entree
Marinated beef flank in skewers then grilled, served with beef curry gravy.
Chocolate Chip, mint and Avocado smoothie
Dessert
Cooling yet decadent blended Avocados, Chocolate chip and fresh mint, garnished with Dragon fruit. A great tropical pick me up.
