My favorite dishes from the island of Bali, highlighting their famous BBQ Roast Pig, known as Babi Guling. Very much the traditional meal that you can get in the island, from their street food vendors to their fanciest resorts. I am offering the most complex Balinese flavors, with a sensible California approach.

Tempeh Crackers
Appetizer
Fermented Soybean cake, crumbled then mixed with tapioca powder then dehydrated. Fried to order, eat with the house made Cucumber pickles.
Aromatic Jasmine Rice
Entree
Steamed Organic California Jasmine rice, infused with Kaffir leaves and lemongrass.
Sauteed Water Spinach with belachan and Coconut
Entree
Locally grown Water Spinach or also known as Morning Glory. Sauteed with belachan tossed in and garnished with toasted coconut flakes.
Cucumber and Shallot Atjar
Small Plate
House pickled Cucumber, Shallot in Coriander, turmeric, rice Vinegar pickle brine. Tart and brightening.
Tomatillos Balinese Sambal
Small Plate
Roasted local Tomatillos, Serrano chiles, sauteed with garlic, lime juice, shallots. Perfect accompaniment to the Roast pork.
Mackerel and Gulf Shrimp boudin on a Skewer.
Entree
A fricasse of California Mackerel and Shrimp mixed with Lemongrass, bird's eye chillies, formed around a bamboo skewer and then Grilled. A boudin-like texture, savory and aromatic.
Roast Whole Suckling Pig
Entree
A whole suckling pig, house brined and roasted over an open flame. Crispy glistening skin, lean tender meat. Crunch, crunch, crunch.
Watermelon Vodka and honey Punch
Beverage
Large Watermelon, blended with honey and Vodka. Served in a Punch bowl, will be available throughout the dinner.
