Beet cured Kanpachi from Omega Blue Seafood • Avocado creme • Fennel oil • Finger lime pearls • puffed tapioca I love the Baja Kanpachi from Omega Blue Seafood. Any chance I get to feature their product I take it. THIS dish is going to be talked about days after.
Torched Beef Carpaccio

Torched organic ny strip • Cured egg yolk • Truffle aioli • Brioche soil • Caper berrie • Micro cilantro I have seen this craze of Filet of beef sushi. My idea for this course is carpaccio meets that torched beef sushi craze.
Lamb Lollipops
Pan seared and oven roasted organic Lamb Lollipops • ghee poached potato • confit garlic parsnip whip • sous vide asparagus Lamb is one of my favorite things to cook. This course is rich in flavor, with a rustic charm.
Sous Vide Creme brulee
Simple and oh so delicious! a perfect creme brulee cooked submerged in a water bath. Crazy, I know, come try it!
