Take yourself to an island in the Northwest Pacific Ocean, almost 6000 miles west of Portland, OR, and experience centuries of European, Mexican, and Asian culinary influence on the indigenous Chamorro people of Guam and the Mariana Islands. Served family style, each dish offered at this meal is selected from the abundance of what can be found at every gathering and celebration on Guam, providing an introductory experience to our food. Kelaguen Guihan yan Titiyas Harina
Appetizer
Our starter, or "chesa" as we would call it on the island, presents a bright welcoming of flavor. This is a Chamorro dish of raw tuna cured in citrus with coconut, onion, green onion, tomato, chili pepper, and served with Coconut Milk Flatbread.
Atulen Elotes yan Panglao

Sink into Chamorro comfort food with a soup found at every gathering on Guam – a simple soup of coconut milk and corn, my version enhances the island & ocean flavor with Oregon Dungeness crab and mushroom.

Based off Chamorro cucumber salad in soy sauce & vinegar, I've incorporated favorite island treats of tangy, spicy pickled papaya, daigo (pickled daikon) & rokkyo (pickled pearl onion) into a mesclun salad with toasted hazelnuts.

No meal from the island is complete without something cooked over fire and smoke. Tonight we offer Guam barbecue spare ribs – soaked overnight in my signature Chamorro-style marinade and then grilled over charcoal for that awesome flavor. Served with Red Rice (white rice flavored and colored with annatto) and Fina'denne (soy sauce, lemon, onion, green onion, tomato and chili pepper).

There is no ignoring the dessert table at a fiesta on Guam. Of all the Chamorro desserts laid out, this one is definitely a favorite. Vanilla custard, chiffon cake, shortbread with coconut candy, hazelnuts, and cinnamon.
