Hand-made pasta and Italian liqueur drive the menu of pasta chef Elizabeth McCoy's (formerly of Faith and Flower, Miro, Otium) immersive dining concept.
This month's menu centers around color. Each pasta dough involves the addition of herbs/purées to allow for the diner to explore how the pasta itself contributes to a dish, and how the dish comes to life through the flavor that created that color. Each course is paired with a custom Amaro-based cocktail.
This month, we welcome our new mixologist, Chris Day (Bar Tribute, Redbird, General Lee's) to the A Mano, Amaro team, as well as the wonderful products of hyper-local Amaro Angeleno.

Farfalle Alla Basilico
Small Plate
A traditional Lombardy pasta hand-shaped into a "bowtie," or "butterfly." The pasta dough is infused with sweet Italian basil purée, served with roasted tomato sauce, Housemade ricotta, and breadcrumbs.
Cocktail Pairing: 'Amuse Booze' -
Amaro Angeleno, dry vermouth, pamplemousse, clarified lemon, phosphate.
Strozzapreti Alla Barbabiatola
Small Plate
Handrolled rope-shaped pasta originating in Emilia-Romagna. The dough is infused with red beetroot purée, and served with brown butter, poppyseeds, roasted yellow and candy stripe beets, walnuts, and whipped goat cheese.
Cocktail Pairing: 'Buck' - Gin, Amaro Angeleno, fresh lime, 'red' ginger.
Agnolotti Alla Arancia
Small Plate
Small pillowy filled pasta from Piedmont. The dough is infused with fresh, organic orange zest, and stuffed with a duck mousse filling. Served with candied Cara Cara orange and pistachio dust.
Cocktail Pairing: 'Old Fashioned' - Aged Venezuelan Rum, Amaro Angeleno, Honey, Chocolate/Mole bitters.
Tagliatelle Dolci Alla Limone
Dessert
A long, thin hand-cut noodle originating in Marche. The pasta dough is infused with Meyer lemon zest and served with a sweet cream sauce, semi-sweet chocolate shavings, roasted locally sourced cherries, and toasted hazelnuts.
Cocktail Pairing: 'Spritz' - Amaro Angeleno, Meyer Lemon shrub, Brine, Bubbles.
