Hand-made pasta & Italian liqueur drive the menus of pasta chef Elizabeth McCoy (Faith & Flower, Miro, Otium) and Christopher Day's (Redbird, Bar Tribute) immersive dining concept. This month's menu centers around the ultra-regional and rarer pasta shapes of Italy. Each course highlights California's local/sustainable produce and meat, and is paired with a custom Amaro cocktail by Day, as well as stories of the origins of each shape courtesy of Chef McCoy. Trofie alla Carota
Small Plate
A hand-rolled spiral-shaped dumpling found only in Liguria. Served with carrot-top pesto, roasted rainbow heirloom carrots, Breiberousse cheese, and roasted walnuts. Cocktail Pairing: "The Witch's Garden" - Amaro Angeleno, Dry Vermouth, Plymouth Gin, Muddled Cucumber; Stirred/up.
Scialatelli Frutti di Mare
Small Plate
A thick, short hand-cut flat noodle traditional to Naples. Served with clams, mussels, house-made 'nduja, preserved lemon, breadcrumbs, and soft herbs. Cocktail Pairing: "Blush Crush" - Damoisseau 110pf Rhum, Pamplemousse Rose, Aperitif Select, Lime; Shaken/up.
Casunziei alla Piselli
Small Plate
A wing-shaped stuffed pasta native to the Dolomites. Filled with English pea purée and housemade ricotta, served with parmesan broth, crispy garlic chips, speck, and mint. Cocktail Pairing: "The Ensign" - Overproof Whiskey, Amaro Sfumato, Honey, Ginger, Lime, German Hefeweisen; Whipped/Tall.
Scarpinocc Dolci
A stuffed "little shoe"-shaped pasta from Lombardy. Filled with sweet marscapone and chocolate, served with blood orange gastrique, and candied pistachios. Cocktail Pairing: "Venetian Diary" - Averna, Fernet Branca, Demerara, Fresh Lemon, Cold Brew Coffee; Shaken/large espresso cup.
