Hand-made pasta & Italian liqueur drive the menus of pasta chef Elizabeth McCoy (The Ponte, Miro, Otium) and Christopher Day's (Redbird, Bar Tribute) immersive dining concept. This month's menu centers around the absolute most Springtime seasonal produce California's local/sustainable farms has to offer in our ultra-regional pasta dishes, and is paired with a custom Amaro cocktail by Day, as well as stories of the origins of each shape courtesy of Chef McCoy. Sorprese Alla Vodka
Small Plate
A "filling-less tortellini" shape from Emilia-Romagna. Served with crispy prosciutto, Black Cow vodka sauce, Parmiggiano-Reggiano, and fried basil. Cocktail Pairing: Asti by Dorset - Black Cow Vodka, Manzanilla Sherry, Cocchi Americano, brine, Basil tincture.
Orecchiette Alla Caponata
Small Plate
A "little ears"-shaped pasta found in the Apulia region of Southern Italy. Paired with an eggplant caponata sauce, fresh goat cheese, and toasted pine nuts. Cocktail Pairing: High Tea Highball - Amaro Montenegro, Single Malt Scotch, Miracle Mile Bergamot Bitters, Soda, Lemon Oils.
Wild Mushroom Caramelle
Small Plate
A candy-shaped filled pasta found mostly in Parma and Piacenza. Stuffed with seasonal wild mushrooms and housemade ricotta, served with whipped brown butter and crispy sage. Cocktail Pairing: Quick Draw - Rittenhouse Rye, East India Sherry, Campari, Sfumato Amaro, Cold Brew.
Mint Stracci Dolci
A hand-torn pasta shape from Liguria. Mint-infused dough, served with seasonal fresh strawberry sauce, house-made vanilla gelato, and toffee crunch. Cocktail Pairing: Ol' Man's Heart- Punt e Mes, Fernet Francisco, Black Pepper+Strawberry Shrub, Cola.
