Hand-made pasta & Italian liqueur drive the menus of pasta chef Elizabeth McCoy (The Ponte, Miro, Otium) and Ryan Badaraco's (Republique, Bestia) immersive dining concept. This month's menu centers around ultra-regional and highly seasonal pasta dishes paired with the offerings of sommelier extraordinaire Sean Beckner-Carmitchel (Preux and Proper, Estrella), as well as stories of the origins of each dish's pasta shape courtesy of Chef McCoy. Maccheroni Alla Trapanese
Small Plate
A long, tube-like pasta originating in Sicily and made one piece at a time using a steel "Feretti," served with a traditional Sicilian pesto Trapanese, toasted almonds, and Grana Padano. Paired With: Castello Della Sala "San Giovanni" Orvieto.
Scarpinocc Alla Peperone
Small Plate
A Lombardy "little shoe" shaped pasta, filled with roasted red pepper and marscapone, served with cavalo nero, housemade sausage, and herbed breadcrumbs. Paired With: Castello Della Sala "Bramito" Chardonnay.
Lasagnette Alla Coda Di Bue
Small Plate
A traditional Ligurian hand-cut ribbon pasta, served with Chef Badaraco's signature oxtail ragú and mirepoix. Paired With: Guado Al Tasso "Il Bruciato" Super Tuscan.
Doppio Ravioli Dolci
A variation on traditional Roman Ravioli, filled with one pocket of Cara Cara orange cream, a second pocket of raspberry cream, served with dark chocolate sauce and blackberry meringue. Paired With: Prugnotto Barbaresco.
