A variety of ingredients from local markets will coalesce to tell a delicious narrative. The meal starts light and floral with a seven herb salad and gradually becomes more decadent as the courses progress, ending with kabocha and cashew cotija tamales, and finally a roadside black cherry stuffed brownie. This meal is meant to honor the duality of all things. Lightness and darkness, pleasure and pain, fire and water. This meal is vegan, gluten-free, soy-free, and entirely low glycemic.
Seven Herb Salad
Dill, parsley, fennel, basil, mint, cilantro, and tarragon, arugula and baby gems, blood orange and olive oil.
Fluffy gluten-free flatbread topped with a sweet cashew cheese, roasted asparagus and spring onion, fresh strawberries, cherries and herbs.
Purple Salad and Yogurt with Eggplant Wrapped Date
Braised purple cabbage and red onion served on top of lime almond yogurt, complimented with a spiced poached date wrapped in thinly sliced smoked eggplant.
Kabocha Squash and Sprouted Masa Tamales
Sprouted masa stuffed with kabocha, spinach and cashew cotija. Served with a poblano hazelnut creme.
