Homemade Ice Cream Sandwiches

Ahh, is there anything better that homemade Ice Cream as an easy Summer treat! In this class we're making Ice cream, cookies and tempered chocolate (or a shortcut chocolate dip). If you don't have an ice cream maker, you can still join and use your favorite purchased ice cream! You'll still learn a lot about custards of all sorts (creme brulee, pudding, etc.) 1) Homemade Ice Cream (we'll be preparing an infused variety which could be flavored with Mint, Coffee, Vanilla Bean, Ginger, Lemon Zest or similar). If you want advice on how to make a fruit or other add-in ice creams, please ask in advance-- we can talk you through the process 2) Soft Wafers -- we'll be preparing a tender, not-too-sweet chocolate wafer When pairing cookies with ice cream, the texture is important to insure a cookie that doesn't snap or break when bitten into 3) Demoing how to Temper Chocolate to yield a snappy chocolate shell to encase the sandwiches If you don't have an ice cream maker, you can still make the sandwiches with your favorite prepared ice cream and we can further discuss how to dip the ice cream sandwiches in tempered chocolate, nibs or nuts. Classes are held in real-time so that we can cook together, offer feedback and answer questions. You may opt to cook along or simply observe the lesson. Our Instructor is always happy to help with questions as they come up during class or following. We have carefullly created the menus for these online sessions to be executed in a typical home kitchen; neither specialized ingredients nor equipment are required and we can always suggest alternatives. Following your reservation, an ingredient and equipment list will be emailed to you. Menus have been specially developed to allow for adaptability and substitutions while avoiding specialized equipment or ingredients. Interesting, Healthy & Delicious meals don't need to require a lot of ingredients! About the Instructor Emily has been teaching cooking for 16 years with a mission to make everyone a better home chef. Her approach transcends merely following recipes to impart an overarching understanding of ingredients, their properties and how to work with them in a marriage of kitchen chemistry and culinary creativity.
