For this brunch, I wanted to prepare a special and sentimental meal, inspired by my favorite dishes that my mother prepared for me while I was growing up. The dishes are as authentic to my mother's creations/recipes as possible while reflecting my own, personal growth in the kitchen. Each of the dishes will be plated individually as small plates/bites.

Coffee and Juice Bar

Sun Tropics juices and French-pressed coffee.

Appetizer
Fritters with julienned vegetables (sweet potatoes, carrots, potatoes, onions, and scallions). Made with a batter of seasoned rice flour and coconut milk. Served with a spicy cane vinegar dipping sauce.
Veggie Scramble
Entree
Scrambled eggs with thinly sliced scallions, tomatoes, and diced eggplant and onions.
Raspberry Bibingka
Small Plate
Gluten-free cake made with rice flour and coconut milk. Served with a maple and coconut syrup. Topped with toasted coconut and seasonal fruit.
Chicken Adobo Hash
Small Plate
Chicken adobo (chicken slow-cooked in cane vinegar, soy sauce, garlic, bay leaves, cracked peppercorns, local honey, and other spices), sweet potatoes, potatoes, onions, kale, and sweet peppers. Served with a sous vide slow-poached egg.
