Rice is the most common staple food in the Philippines and I clearly remember it being served at almost every household meal growing up. One of the things I enjoyed most is using the rice to soak up all of the amazing and intricate flavors of the Filipino soups, stews, and other dishes that my mother would prepare. For this meal, we will be preparing my interpretation of a few of these childhood favorite dishes along with a couple different rice dishes. We will be collaborating with Roli Roti to use their line of bone broths in the savory dishes we prepare. The Filipino version of egg rolls. We'll be serving the following flavor with an accompanying dipping sauce: - Chicken Shanghai- ground chicken and julienned vegetables.

Adobo sa Gata
Mushrooms slow-cooked in vinegar, Tamari, garlic, bay leaves, black peppercorns, and coconut cream. (Roli Roti vegetable broth).
Kare Kare
Braised ox tail in a peanut-based stew w/ charred eggplant, baby bok choy, blistered green beans. Served with bagoong (salted shrimp paste. (Roli Roti beef bone broth)
Chicken Afritada
Chicken stewed in freshly roasted tomatoes, onions, mild peppers, garlic, fish sauce. (Roli Roti chicken bone broth)

Cassava Cake
A flourless cake made with grated cassava (yucca root), coconut milk, and eggs. Top layer of custard flan and toasted coconut.
