We are honored to collaborate with Portland's premier Filipino pop-up chef, Melvin Trinidad! His dining series, Barkada PDX, is a trailblazer in the Filipino pop-up scene in Portland. Pork Lumpia
Pork, carrots, celery, onions, garlic, oyster sauce in a pastry wrapper. Served with a honey-habanero sauce.
Arroz Caldo Arancini
Chicken-ginger risotto balls, panko-chicharron coating, fried garlic powder, calamansi aioli
Chicken Adobo Hash
Small Plate
Chicken adobo (chicken slow-cooked in cane vinegar, soy sauce, garlic, bay leaves, cracked peppercorns, local honey, and other spices), sweet potatoes, potatoes, onions, kale, and sweet peppers. Served with a sous vide slow-poached egg.
Dungeness Crab Tortang Talong
Filipino-style eggplant omelette made with broiled eggplants, diced onions, Dungeness crab, and tomatoes. Served with garlic rice. Served with a spiced vinegar dipping sauce. -pl,m
Nilaga Cabbage Rolls with Bone Marrow Gremolata
Slow braised brisket and lemon zested rice rolled in a cabbage leaf. Topped with bone marrow cilantro, scallion, thai chili gremolata. Beef Bone Broth, Beef fat confit potatoes.
Bibingka Pancakes
Gluten-free pancakes made with rice flour and coconut milk. Served with a coconut syrup. Topped with toasted coconut and seasonal sliced fruits. (Bibingka is a Filipino dessert that is usually served as a cake.)
