For this meal I'll be preparing dishes with flavor influences from the Philippines and Peru. Both cuisines have some similarities, which include rich and bold flavors. I will be preparing a meal that will showcase the similarities in some of the dishes of each cuisine, as well as highlight the uniqueness of flavors.

Lumpia
Appetizer
Deep fried Filipino-style egg rolls filled with chicken and vegetables. Served with an accompanying dipping sauce.
Ceviche/Kinilaw
Appetizer
Influenced by both dishes that are traditionally prepared with seafood. Cubed fish marinated in lime juice, cane vinegar, aji amarillo, ginger, garlic, cilantro, and red onions. Served on a butter lettuce leaf with potato, and cancha chulpi/cornick.
Peruvian Causa with Pulled Chicken Adobo
Appetizer
Layered potatoes w/ Filipino-style pulled chicken adobo and avocado. Served with farmers' market greens, cherry tomatoes, and citrus vinaigrette,
Ox Tail Seco
Entree
Ox-tail slow braised in beer then stewed in a cilantro and spinach based sauce with peas, carrots, and spices.Served with coconut/ginger steamed rice.
Cassava/Yucca Cake
Dessert
Flourless cake made with grated cassava (aka yucca root) and coconut milk. The cake will be topped with a thin custard flan layer and sprinkled with toasted coconut.
