During college I would frequent some of the most amazing taquerias and would order some of the most flavorful tacos. This inspired us to host a monthly Taco Tuesday Happy Hour/Social. We’re preparing the tacos with flavors inspired by Filipino heritage and summers spent in Hawaii. Vegetable Lumpia
Appetizer
Filipino-style egg roll with diced vegetables. Served with a spiced vinegar dipping sauce.
Salad
First Course
Mix greens, red cabbage, cherry tomatoes, radishes. Calamansi vinaigrette. Coconut/garlic croutons.
Braised Beef Taco
Second Course
Beef slow-cooked in garlic, calamansi, Tamari, lemongrass, ginger, Roli Roti beef bone broth, and spices with a roasted tomato salsa diced onions, and cilantro on a corn tortilla.
Huli Huli-style Chicken Taco
Small Plate
Slightly sweet and savory, marinated and grilled chicken. Topped with a roasted tomato salsa, diced onions, and cilantro on a corn tortilla
Veggie Taco
Second Course
Roasted Mushrooms, caramelized onions, garlic, peppers with a roasted tomato salsa, diced onions, and cilantro on a corn tortilla.
Shrimp and Avocado Poke Taco
Second Course
Poached shrimp, avocado, sesame, Tamari, Adoboloco Hawaiian chili pepper sauce. Topped with a roasted tomato salsa, diced onions, cilantro on a corn tortilla.
Bibingka Churro Donuts
Third Course
Fried pastry made with rice flour and coconut milk. Coated with cinnamon and sugar.
