Up until my late teens, most of my summers were spent in Hawaii. I was exposed to cooking and amazing food at a young age by my grandparents and other family members, who all lived within blocks from each other in an area called Moanalua Valley. This meal will be reminiscent of some of the flavors and breakfast/brunch dishes that remind me of my time spent there.

Vegetable Lumpia
Appetizer
The Filipino version of egg rolls. We be serving the following flavor with a spiced vinegar dipping sauce: Vegetable-Seasoned potatoes, sweet potatoes, carrots, and green beans.
Sangchu Geotjeori
Korean-style lettuce salad. Farmers market mix greens, soy/sesame vinaigrette.
Shoyu Tamago
Japanese-style soy sauce eggs.
Spam Omelette
Egg wrapped around homemade Spam (made with ground pork and pork belly).
Adobo Rice
Filipino-inspired rice dish infused with chicken stock, garlic, bay leaves, soy sauce, vinegar, black peppercorns
Vigan Longanisa Sausage Patties
Entree
Typically made with pork, but we're preparing our version with seasoned ground chicken, garlic, and other spices. Butterleaf lettuce and cherry tomatoes.
Kona Coffee Bibingka
Dessert
Filipino-style coconut rice cake made with Kona coffee. Rice flour, macadamia/pecan crumble. Served with seasonal fruits.
