For this dinner I wanted to prepare a special and sentimental meal, inspired by my favorite dishes that my mother prepared for me while I was growing up. Both sweet and savory flavors will be highlighted in each of the dishes. The dishes as authentic to my mother's creations/recipes as possible while reflecting my own, personal growth in the kitchen. We'll be preparing the main courses using Son Fish Sauce. Son Fish Sauce is made using only anchovies and sea salt.

Lumpia
Appetizer
The Filipino version of egg rolls. We be serving the following 2 flavors with accompanying dipping sauces: 1) Pork/Shrimp- with ground pork, diced shrimp, and julienned vegetables. 2) Veggie- with chopped kale, baby bella mushrooms, and sweet potatoes.
Salad
Appetizer
Organic mix greens, sliced radishes, cherry tomatoes with a calamasi and honey vinaigrette. Coconut/balsamic croutons.
Ukoy (Ooh-koy)
Small Plate
Fritters with shrimp, julienned sweet potatoes, beets, carrots, and scallions. Made with a batter of seasoned rice flour and coconut milk. Served with a spicy cane vinegar dipping sauce.
Roasted Pork Belly
Entree
Slow-roasted crispy pork belly. Served with a butternut squash/coconut cream puree and coconut/ginger-infused steamed jasmine rice.
Salted Raspberry Bibingka
Dessert
A lightly sweet, moist cake made with rice flour, raspberries, honey, and coconut milk. Served with toasted coconut ice cream and finished with salted raspberry caramel and Ilocano asin (sea salt from the Philippines).
