In the Hawaiian language, pūpū denotes a relish, appetizer, canapé, or hors d'oeuvre. Pulutan is a Filipino term for finger foods or appetizers eaten while drinking liquor or beer. This dinner will consist of some of my favorite Filipino and Hawaiian-inspired bites.
Anthony Francisco will be performing Island Reggae covers. Anthony plays solo acoustic as well as full band gigs all over Southern and Northern California. He made a name for himself in the Socal Reggae scene playing with many different Reggae acts throughout SoCal. His project as a solo artist pulls from influences such as Allen Stone, Jason Mraz, John Mayer, Justin Nozuka and Bruno Mars. Mixing an array of different genre's, Anthony's original music combines Rock and R&B with a pop-reggae element.

Ahi Tuna Poke

Wild-caught and sashimi-grade tuna, cubed and seasoned with chili, red onions, sesame oil, garlic, ginger, soy sauce, Hawaiian salt, furikake.
Lumpia

The Filipino version of egg rolls. We'll be serving the following flavor with accompanying dipping sauces:
1) Chicken- with ground chicken and julienned vegetables.
Spring Mix Salad
Small Plate
Organic mix greens, sliced radishes, cherry tomatoes with a pineapple and red wine vinaigrette. Served with balsamic-glazed garlic/coconut croutons.
Mochiko Chicken Katsu
Small Plate
Chicken thighs marinated in Mochiko rice flour, soy sauce, brown sugar, honey ginger, garlic, green onions and peppers then dipped in seasoned flour and panko bread crumbs then fried to a crisp. Served with a side potato/macaroni salad with julienned vegetables.
Adobo-glazed Ribs
Small Plate
Seasoned then slow-roasted pork baby back ribs. Finished with a Filipino-style adobo sauce. Topped with sliced scallions. Served with steamed jasmine rice.
Deconstructed Chocolate Haupia Pie
Dessert
Bottom layer of cholocate and coconut custard cream. Top layer of haupia (creamy coconut pudding) on a coconut/shortbread crumble. Topped with fresh Kalua-infused whipped cream, crushed macadamia, toasted coconut, and shaved chocolate.
